Unfortunately, the application's developer doesn't provide a Mac version of Ethnograph. However, you could use a Windows emulator for Mac such as WineBottler or Boot Camp, then install and run Ethnograph with its help. I'm not 100% sure that it will actually work since the application seems to be quite old, but it's definitely worth a shot if you're up for it.
